- Study of the necessary and sufficient steps for the elaboration of a fermented product.
- Study of the microbiological diversity present in homemade fermented preparations.
- Impact of the various stages of manufacture of a fermented food on its physico-chemical and sensory characteristics (texture, color, smell, taste, composition ...)

Your role :
- You actively participate in the conception of the coherent scientific research project and in its pedagogical adaptation in a scientific way.
- You ensure the follow-up and the realization of your project with your groups of volunteers. It is essential to find the right balance between scientific rigor and the necessary adaptation to your audience.
- You will conceive and implement a project to develop the program’s activity for a holiday camp, whether it is on scientific and/or pedagogical aspects.
- You will develop scientific partnerships with research institutes
- You analyze the data collected in the field, and valorize them.
